At Señor Moose, we celebrate comida tipica, the cooking found in central plateau Mexico's fondas and backroom kitchens.
The food we love doing here at Señor Moose is food that we have loved during 30 years of living and eating in Mexico.
From moment one I have written down recipes, watched and made notes as I have talked to women in fondas (small homey restaurants) road side places, houses and markets, most often in the states of Michoacan, Jalisco and Nayarit as well as in Mexico City.
I have been fortunate to have had wonderful creative women helping me in the house who cooked with what there was that day, what was interesting at the market, food they prepared for their families from memory, recipes from mothers, grandmothers and aunts—and a few of my favorite men as well.
I took notes as they cooked, or as we cooked together. The food at Señor Moose is a result of those jottings. Not to mention a stunning effort from our amazing staff. We try to stay true to real FONDA food, food that tastes as much like it does in Mexico as possible.
Oh yes—THE NAME—we didn't open as a Mexican restaurant. About nine months into a mostly regular old breakfast business, I realized that nobody was doing the kind of COMIDA TIPICA, real Mexican food, that I was missing so much, hence we started adding Mexican dishes as specials, first at breakfast and a few months later adding a full dinner menu and hours so that people could taste Mexican food from another viewpoint, see that there is so much more to Mexican food that what is usually offered. Café Moose no longer made sense so Señor Moose it has become.
Moose? Why not? And it still doesn't make sense, but Moose we are.
